Having a super dedicated gaming weekend (CON) would be great. Its just not easy to set up. To hire a conference room or rooms, you need money up front, and you need to convince the hotel attached to reserve some room for your players. Of coure, doing this in off tourist season helps a lot, but you would need starting funds.
