if there's too many options. you can always start out and run these as "Core" games. the players just need to choose options only from the core book, and it simplifies a lot of things: the gm doesn't need to care about player Gunslingers, Summoners, etc. and just needs to deal with the occasional NPC with something new.

By the rules, you are not allowed to adjust the encounters to make it easy because you are one player short. It can feel nicer to just play with three and do away with the pregen as that flows better, its not by the rules.
As Vince (seraphim) said, if they are experienced, at least with the system, just give them the pregen to handle. I do this at all my tables.

Your highlights are really cool. Looks like they went with some nice creative sollutions, and that is awesome! I hope they all come back for part two.

As to what to run after this:
Both the Confirmation and the Wounded whisp are good introduction scenarios. They both assume the characters are new to the society, so it explains things a lot more. Also, both scenarios are replayable, meaning that people can play it again when they make a fresh lvl 1 character (normally you can play a scnario only once).
With what you are looking for, the wouned whisp will probably fit best.

If you are still strapped for time, scenarios from season 1 would be a good bet for you. Those are definitely shorter in length. It does mean the story is usually a bit more straight forward. 
From season 1 I really like voice in the void and citadel of flame. Altough citadel of flame will be a bit harder on lvl 1-2 characters.
